Through the Still - GDS Still Waters Event

The first GDS event was an instant smash at the Still Water Distillery. The gentlemen came out in fine order, some even sporting pocket squares.
After being aquanted with our gracious hosts, Barry Stein and Barry Bernstein, we were taken on a enducational tour of ther distilling process.
First the spirit. While this is a very straight forward process, it is not as easy as one may think. The level of care and involvement that these men put into each batch truly earns
them the title of handcrafted.What is tuely a simple equation, fermentation, boiling and distilling of grain, is not so. It takes great care and skill to handcraft every bottle as these fine gentlemen do.
As being a small distillery they are met with many challeneges. But this does not deter. Challenges here are seen as opportunities and the results are the proof. Because of their smaller scale production, spirits are closely scrutinized, experimented and perfected,evry drop counts.Their use of ex-bourbon oak casks are resourced from several manufacturers,
giving new flavours to and discovery every batch.
You don't buy one bottle from these guys, you come back again and again, each time discovering something new.
One of the unique items Still Waters sells is the spirit itself, in pure form, right out of the still. The spirit, having gone through many rounds of distillation to form a pure alcohol, is a rare treat to those with a interest in the whiskey process.The rough and natural taste, while harsh, is something to experience and appreciate. The gentlemen had the opportunity to sample the spirit and contrast it with the cask strength version of itself. An opportunity few come by.
Over all the results of these beautifuly crafted whiskey's is a work of art. For what else is a master distiller than an artist, his craft the distilling of grains and the perfection of taste.
